Quinoa Salad with Roasted Vegetables

Ingredients:

  • 1 cup quinoa

  • Assorted vegetables of your choice (e.g., bell peppers, zucchini, cherry tomatoes)

  • Olive oil

  • Fresh herbs (e.g., basil, parsley)

  • Lemon juice

  • Salt and pepper to taste

Instructions:

  1. Cook quinoa according to package instructions and set aside.

  2. Preheat the oven to 400°F (200°C).

  3. Chop the vegetables into bite-sized pieces and place them on a baking sheet.

  4. Drizzle the vegetables with olive oil and sprinkle with salt and pepper.

  5. Roast the vegetables in the preheated oven for 20-25 minutes or until they are tender and slightly caramelized.

  6. In a large bowl, combine the cooked quinoa and roasted vegetables.

  7. Add fresh herbs, a squeeze of lemon juice, and season with salt and pepper to taste.

  8. Toss everything together until well combined.

  9. Serve the quinoa salad as a main dish or side dish. Enjoy!
