Quinoa Salad with Roasted Vegetables

Ingredients:
1 cup quinoa
Assorted vegetables of your choice (e.g., bell peppers, zucchini, cherry tomatoes)
Olive oil
Fresh herbs (e.g., basil, parsley)
Lemon juice
Salt and pepper to taste
Instructions:
Cook quinoa according to package instructions and set aside.
Preheat the oven to 400°F (200°C).
Chop the vegetables into bite-sized pieces and place them on a baking sheet.
Drizzle the vegetables with olive oil and sprinkle with salt and pepper.
Roast the vegetables in the preheated oven for 20-25 minutes or until they are tender and slightly caramelized.
In a large bowl, combine the cooked quinoa and roasted vegetables.
Add fresh herbs, a squeeze of lemon juice, and season with salt and pepper to taste.
Toss everything together until well combined.
Serve the quinoa salad as a main dish or side dish. Enjoy!
